Bolivian farmers also have a reputation of being \"hard to work with.\" So a good Bolivia doesn't come on market all that often, and I snatched this one up excitedly.\u003c\/p\u003e\n\u003cp\u003eIt's a washed process coffee, and you can roast it light like a Costa Rica or Honduras to get some floral notes, tangerine, and nuts. If you roast it just into 2nd cracks, you get more of a cocoa and cashew taste with just a hint of citrus, but don't take it any darker than that or it starts picking up a charcoal aftertaste. A Guatemala roasting profile seems to work pretty well for us.
