There is a lot of low quality Burundi on the market, and when you get a bad one, all you can do is take it almost to a French roast and enjoy how sweet and smooth it tastes despite the darkness of it. When you find a good one, the medium roasts (try just to the 2nd cracks) will surprise you with tastes of figs, caramel, lemon, and sour cherry.  There’s no other coffee quite like it, but neighboring Rwanda would be its closest match.  Burundi is resurrecting its coffee industry after several decades of civil war.The quality has improved greatly in just the past few years, and will continue to grow by leaps and bounds in the next few years.\u003c\/p\u003e\n\u003c\/div\u003e\n\u003c\/div\u003e\n\u003ch2\u003eManual\u003c\/h2\u003e\n\u003cdiv class=\"categoryextrafield\"\u003e\n\u003cdiv class=\"content\"\u003e\n\u003cp\u003eBurundi is a landlocked country which complicates bringing its coffee to the global market. Here you get a toned down fruit acidity (think mango, butterscotch, orange), and a caramel-raisin flavor with a cinnamon finish. It's not sour -- mostly sweet. The intricacies of the hidden flavors make it enjoyable to sip at.\u003c\/p\u003e\n\u003cp\u003eIf you roast this just barely to the 2nd cracks and let it out, you get a coffee with no acidity, caramel and black cherry tastes, and sweetness but also you start to taste the roast. The Buhorwa Mill coffees tend to be as good as anything you'll find in the country. This lot is from a region known as Buckeye and consists of just a few family farms and is the second year we have bought their coffee. It is all a single varietal known as Jackson Bourbon varietal.\u003c\/p\u003e\n\u003cp\u003eThis is a washed process coffee and works at a variety of roast levels. If you roast it light -- 30 seconds past the end of the 1st cracks -- you have a clean, bright, tart coffee with lime, vanilla, cascara, and chocolate undertones and hints of roasted carrots. If you take it a little farther -- maybe 20 seconds shy of 2nd cracks beginning -- it really smooths out, has much more sweetness, and you get distinct brown sugar and orange tasting notes, some caramel\/butterscotch undertones. However, to further complicate things, the 2nd cracks are later than you might expect. About 5 degrees later than I was expecting. But if you take it to 2nd cracks, it's not BAD, but it's too smoky and flattened out a little bit. So push the edge and try to get it close without getting into them. A solid medium roast level). You get a coffee with caramel and brown butter, brown sugar sweetness. Medium body, pleasant acidity. Great mug of Burundi.  Take it 45 seconds into the 2nd cracks (or even a little darker) and you get a remarkable French Roast with great sweetness and smoothness.  Very slight undertones of cherry despite the darkness of the coffee. Take it lighter, and we were tasting mango and orange, but it was tricky to pull out the fruity flavors without underroasting it. In small sample batches, it was coming out fantastic, and then in large production roasts, we couldn't get the fruit and it was just tasting a little bit green\/underroasted instead. Try out this washed Burundi bean and see what you think!  You can roast it 30-40 seconds past 1st cracks for a very bright, fruity, juicy option, including some orange and lime dominating the flavor.  I like it more at a medium roast, just shy of 2nd cracks, where it is still bright and juicy, but more of a caramelized sugar and raisin note and not as acidic, but still some citrus.
